This is a fun and healthy breakfast that’s easy to make because your refrigerator does all the work! It’s filling, delicious, and provides balanced nutrition with omega-3 fatty acids and cancer-fighting lignans from the seeds, along with antioxidants and phytonutrients from the fruit.
Chia and flax seeds are rich in fiber, something 97% of Americans are lacking. This breakfast provides a nice dose of fiber to start your day. It not only keeps your intestines happy, but provides special nutrients that feed the 100 trillion good bacteria in your gut.
Did you know chia helps to lower blood pressure? Flax is a strong cancer fighter, plus it has an abundance of research demonstrating its good work in lowering inflammatory markers in the blood. This is key because the root of all degenerative disease is inflammation.
As you can see, this is a breakfast that packs a strong nutritional punch!
1/4 cup, less 1 tablespoon, organic ground chia seeds (can be black or white)
1 Tablespoon organic ground flax seeds
1 cup organic almond milk (or any non-dairy milk)
1/2 tsp organic cinnamon
1/2 tsp gluten-free organic vanilla
1/2 cup organic raspberries
1/2 cup organic blueberries
Add first five ingredients into a mason jar. Stir until all the ingredients are mixed together.
Place in the refrigerator for at least two hours, or overnight, to thicken.
Once thickened, place chia pudding in a bowl, add the fruit toppings of your choosing and enjoy!
