Chickpea Lettuce Wraps
The kids are going back to school and you are searching for healthy lunches and snacks! This recipe is full of plant-based protein and fiber. The lettuce-wrapped option leaves you feeling energized and full of nutrients.

Ingredients
  

  • 2 cans organic chickpeas
  • 5 stalks organic celery 1 cup, finely diced
  • 1/3 cup scallions sliced
  • 3 large organic carrots finely diced 1 cup)
  • 1 5.3 oz container of kite hill Greek style almond milk yogurt about 1 cup
  • Juice from half of a lemon
  • 1/2 cup cashews broken into pieces
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1 tbsp curry powder
  • Optional: lettuce cups for serving.

Instructions
 

  • Drain & rinse chickpeas.
  • Chop veggies and combine with chickpeas and cashew pieces in a large bowl.
  • In a small bowl, combine the yogurt, lemon juice, paprika, salt, and curry powder. Mix together with a fork until well combined.
  • Toss chickpea mixture with yogurt mixture until well coated.
  • Top with scallions and serve in lettuce cups
