Cowboy Caviar
Cowboy caviar might just be another way to say ‘bean salad’ but we think it makes it sounds much more fun, so we are on board! This dish can be eaten as an entree, served as a side dish, or eaten as a dip with chips. This recipe is high in plant-based protein, phytonutrients, and fiber. The bell peppers in this recipe also make it an excellent source of Vitamin C. Did you know that 1 cup of bell pepper has more vitamin C than an orange does? We also love this recipe because most of you might already have the ingredients sitting in your pantry. It can be made with some staples, primarily canned or dried beans. Add a can of rinsed corn to this recipe for more flavor and crunch.

Ingredients
  

  • 1 can of black beans rinsed
  • 1 can of pinto beans rinsed
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1/2 red onion finely chopped
  • 1 cup of cherry tomatoes halved
  • 1/4 cup of sliced chives
  • 4 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1 Tbsp white vinegar
  • 1/2 tsp salt
  • 1/2 tsp chili powder

Instructions
 

  • Chop your veggies and transfer them to a large bowl.
  • Drain and rinse the beans and add to the mixture of veggies.
  • Make the dressing: in a small bowl whisk together the olive oil, lemon juice, vinegar, salt and chili powder.
  • Top the veggie mixture with the dressing and store in the fridge until you’re ready to eat it.
