Dr. Vikki’s Kitchen Challenge!
As a way of introduction, I started Dr. Vikki’s Kitchen as an answer to the dilemma many of you, my patients and followers, encounter when trying to eat healthier and follow our program here at Root Cause Medical Clinic. You want to eat healthy nourishing food, but often just don’t know where to start.
The most common obstacles I hear are:
“I don’t know how to cook.”
“I don’t know how to cook healthy food.”
“I don’t like vegetables.”
“My meals don’t taste great. My family demands unhealthy or fast food.”
“Cooking takes more time than I have.”
“I don’t have time to go shopping for food every day.”
“My family members are picky eaters.”
Do any of these sound familiar?
I understand these obstacles completely. I raised three children and I know how it can be trying to cajole children into eating healthy food. While my children are now grown, personally I too work long hours, yet I cook a full meal every night for my family that is healthy, fast, and delicious. It’s not hard and I want to share with you how I do it.
The focus of my recipes is plant-based, gluten-free, and mostly vegan (the occasional egg may appear). They are also typically free from any refined sugar or starch. I’m not insisting that you become vegan but when you have a strong plant-based foundation for a meal, it’s easy to add a chicken breast or some salmon to any of my meals if you so choose. It’s not hard to toss a chicken breast in a pan nor broil a piece of salmon, but what you eat with it should provide strong health benefits such as:
- High in antioxidants
- Strong in healthy fats
The above is important because: the food you eat is either moving you towards or away from disease. Degenerative diseases such as heart disease, diabetes, cancer, obesity, and autoimmune diseases are strongly lifestyle and dietary based. Each and every time you eat you want to give your body the information and tools to heal itself, stay slim, and prevent disease.
My meals will do just that.
