Sometimes the kitchen can be the site of a happy accident. This recipe was one such occasion. My son wanted a “new” smoothie flavor so we got some frozen fruit options we typically don’t get, peaches, pineapple and mango, and I started experimenting. Due to the frozen nature of the fruit and the amount I used, the “smoothie” was very, very thick. So much so I ended up eating it with a spoon. My son commented that he loved it (mission accomplished!) and that he’d like to top it with granola and perhaps other things and make it an official “bowl” vs. a smoothie one drinks. Personally I would have thinned it out and just made it a drinkable smoothie, but the idea intrigued me and I made it again and topped it with a variety of fruits and nuts and seeds. Sure enough it was delicious and it was kind of fun to not just drink breakfast! You can certainly make this your own by varying the frozen fruits you use.

Ingredients
  

  • 1 cup organic unsweetened almond milk or other dairy-free milk of choice
  • 1/2 organic banana
  • 1/2 organic avocado
  • 2 organic medjool dates, soaked with pit and stem removed
  • 1/2 cup frozen organic peaches
  • 1/2 cup frozen organic pineapple
  • 1 cup organic baby spinach leaves

Instructions
 

  • Place all ingredients in a high speed blender and blend until smooth and creamy.
  • Place in a bowl with the toppings of your choice.
  • Suggestions: granola, almond butter, goji berries, shredded coconut, sliced nuts such as walnuts, pecans or seeds such as pumpkin or sunflower.
