Gluten Dairy Free Recipes Chocolate Chip Cookies
Chocolate chip cookies are a classic, favorite dessert. They become an unattainable dream, however, when you’re avoiding gluten, dairy, refined sugar and grains… Or do they? The good news is that you can still enjoy these yummy treats without the guilt and without your body hating you for filling it with things it doesn’t do well with. This recipe is very easy and very fast. You can literally whip these up in minutes and with the short cooking time, you can be enjoying them fresh out of the oven within half an hour of deciding to make them. Try this gluten free, dairy free, recipe for chocolate chip cookies and please let me know how you like it!

Ingredients
  

  • 2 cups organic finely ground almond meal
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup of organic coconut oil melted – use refined coconut oil if you don’t like the flavor of coconut.
  • 3 Tbs organic maple syrup
  • 2 tsp organic gluten-free vanilla
  • 1/2 cup dairy-free semisweet organic chocolate chips. You can also make your own sugar free chocolate. Lily’s chocolate chips is sweetened with stevia.
  • 1/2 cup chopped raw, organic walnuts or pecans – lightly toast them in a small saute pan before adding to the batter to bring out their flavor. Optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Whisk together the dry ingredients, except the chocolate chips. Add all the wet ingredients to the dry to fully combine. Lastly mix in chocolate chips and chopped nuts if you’re using any.
  • Place a small heaping teaspoon of dough on cookie sheet about 1 -2″ apart.
  • Cook for 8 minutes or until golden brown.
  • Cool for 10-15 minutes.
